Enzyme - substance produced by a living organism that acts like a catalyst to bring about a specific biochemical reaction

How pH, Temperature, and Concentration Levels Affect Enzyme Activity
1. pH - Very high or low PH levels result in the loss of activity for enzymes most of the time. The most favorable value is at the point called the Optimum pH where the enzymes are the most active. The optimum pH will vary from one enzyme to another.
2. Temperature - The reaction increases as the temperature increases. A ten-degree Celsius or 50 degree Fahrenheit increase can increase the activity by 50% to 100%. Even changes of 1 to 2 degrees can affect enzyme activity by 10% to 20%.
3. Concentration Levels - The higher the increase in concentration, then the maximum reaction rate increases. The rate of the reaction goes up as the concentration increases since enzymes can really speed up reactions.
